Culinary update

I've been cooking again; partly because the freezer was fairly empty and partly because I just felt like it.

Last night I did Mexican; Mexican rice with shrimp, black beans, an egg dish with potatoes and roasted peppers plus, of course, tortillas and both red and green salsa.

Today I've cooked a big pot of minestrone, baked some chicken legs after marinading them in fish sauce, lime juice, coriander root, pepper, galangal and garlic, and cooked up a big batch of baked pork chops with potatoes, parsnips and pears.

That should keep us going for a while.

Sounds Good. I cooked up a batch of Osso Bucco the ither day and need to cook up something with chicken. Maybe Ill fall back on my version of the Malakor Green Chicken Curry. Ive also got some shrimp so Ill make so Chili Shrimp. :)

Reminds me to post the recipe for Margaret Fox's Vegetarian Black Bean Chili. Wonderful stuff, lasts for days.
