Culinary update

chickenfeetI've been cooking again; partly because the freezer was fairly empty and partly because I just felt like it.
Last night I did Mexican; Mexican rice with shrimp, black beans, an egg dish with potatoes and roasted peppers plus, of course, tortillas and both red and green salsa.
Today I've cooked a big pot of minestrone, baked some chicken legs after marinading them in fish sauce, lime juice, coriander root, pepper, galangal and garlic, and cooked up a big batch of baked pork chops with potatoes, parsnips and pears.
That should keep us going for a while.
