Black bean soup
Oct. 3rd, 2015 02:29 pm I like black bean soup. I really like this new recipe I tried based on a Jamie Oliver thing.
500g black beans soaked, cooked and drained (or 2 x 28oz cans)
2 medium red onions chopped
I sweet red pepper chopped
1 tbsp cumin
1 litre water
2 mushroom stock cubes
1 12oz can corn
4 cloves garlic chopped
2 chipotle chilis from a can of chipotles in adobe
splash of olive oil
To finish - yoghourt and chopped coriander
Saute onion, cumin and garlic until lightly browned. Add the rest of the ingredients, bring to boil and simmer until beans are very tender. Process about half the solids in food processor and return to pan. Salt and pepper to taste.
Serve with a dollop of yoghourt and a generous sprinkling of chopped coriander leaves.
Quite rich and smokey with the corn adding a bit of brightness.
