Preserving

The Kittenkondo seems to have become a preserving preserve. Right now there is gravlax doing its thing in the fridge and a batch of jerky in the oven with another one to go later. In the fridge there are:
  • Garlic scapes (ferment)
  • Shallots (ferment)
  • Garlic (sweet, vinegar)
  • Vietnamese sandwich pickle with a twist - beets as well as carrot and daikon used
  • Salted limes
And then either commercial or gifts; beets, pickled herring and full sour dills.
