First local fish of the year! It has been a long, hard winter and fishing Lake Huron has not really been feasible but now it's warming up a bit and my favourite fish purveyors are back on the water. There wasn't actually a catch on Friday so nothing fresh available but I did score a lake trout fillet frozen earlier in the week. I cooked it last night. I fried it using Jamie Oliver's "crispy skin" technique and served it on some lightly dressed peppery green with du Puy lentils on the side. (One of my most commonly used techniques with fish that will speak for itself). Add a glass or two of Chilean Viognier and it doesn't get much better. The piece was bigger than I would ideally buy (something over 500g) so lots of leftovers. My packed lunch today features a salad of trout, potatoes, golden beets, broccoli, anchovies and capers in a yoghourt based dressing!
