Anticuchos
Jan. 16th, 2018 12:57 pm I made anticuchos on the weekend. They were delicious but now I think we need to try using heart for jerky as it is really lean, very cheap and one doesn't need "tender" for jerky. FWIW I can get very nicely trimmed beef heart from my non-GMO anti-biotic free farmer/butcher for $2.99/ib regular price. On Saturday it was on sale at $5 per, which turned out to be three pounds of meat.
Here's the recipe:
3lbs beef heart trimmed and cut into approx 5cm x 2cm x 1cm pieces
125ml white vinegar
3 cloves garlic crushed
1 tbsp aji amarillo
1 teaspoon ground cumin
1 tbsp salt
i tsp annatto powder (didn't have so used turmeric)
Marinade overnight. Thread on skewers. Grill over not too hot coals or under medium broiler until done.
Serve with grilled sweet potato slices and or slices of corn. And beer (or a pisco sour)
Might use this marinade for jerky or might up the spice a bit.
