I don't mind putting the work in to create a fancy meal but it's not something I want to do every night and I don't think it's necessary. Tonight was a good example of how to eat well for little effort and not too much dosh. It was the first night this week that t'lemur has been home for dinner so something decent was called for. We had:

Mussels cooked with garlic, white wine, cream and tarragon with good fresh bread from Carousel

A salad of romaine and croutons with home made Caesar dressing.

The salad dressing was already in the fridge so the whole meal took less than thirty minutes to prepare and cook and it was really good.

Easy, quick and very good. That's my kind of cooking.

I love that this is your definition of an easy, quick meal...whereas for many others it would be beans on toast or a takeaway! Sounds divine, though. Yum!

To be honest it was probably ten minutes more work than beans on toast and less work than getting delivery given how much we faff about deciding what to order.

Oh, I know that, but many don't! One of my favourite quick-and-easy meals involves chucking some chicken pieces in the oven with a tin of tomatoes, vermouth, lots of thyme, garlic, spices and seasoning, forgetting about them for 40 minutes and serving them with some nice baguette - and you'd be surprised how many people express their awe at my mad cooking skillz!
