Cocktails and mixed drinks

As the season for getting stupidly plastered approaches I would like to know your favourite cocktail/mixed drink recipes. Here are a few of mine for starters:

Dark and Stormy: Dark rum (preferably Gosling's), ginger beer (not ginger ale), ice and a slice of lime.

Pisco Sour: Pisco (Chilean grappa), fresh lime juice, sugar, ice, egg whites; all whizzed up to a froth in a blender.

I haven't thought up a name for this: Ice, generous measure of gin, dash of Pernod, slice of lemon. Either on the rocks or shaken and strained.

When I'm not drinking Scotch and ginger ale, I like to mix peach schnapps into smooth orange juice and traditional-style lemonade, which makes quite a sweet summery drink, perfect for bleak winter nights.
