I'm getting confident enough to cook Thai food without looking at recipes. Last night I cooked:

Choo chee fish
Long beans with pork, roasted chilli paste and basil
Chinese celery with beancurd
Coconut milk soup with mushrooms, fried beancurd and cuttlefish balls
Steamed rice

I only used a recipe for the choo chee sauce.

The other thing I like about this kind of cooking is how cheap it is. I did the ingredient shopping yesterday and spent less than $20 which included a bunch of fruit. We had a great meal and have a fridge full of leftovers. Can't beat that.

I've not been a huge beancurd fan in the past, but now I've experienced that special beancurd that comes from the top of the beancurd in the beancurd making process, and it's great! Mmm. I'm going to learn how to make beancurd with eggs and black fungus.

I like beancurd in many forms. The deep fried stuff; both the firm cakes and the 'puffy' type are very handy to have around and the regular kind is good in dishes like the celery one last night.

Sounds yummy! I wish Ireland was a bit better with ethnic food...good Thai restaurants are a bit thin on the ground, so I don't really know very much about Thai food. Come to think of it, good Chinese, Indian, Japanese, etc restaurants are thin on the ground, too.

I don't think Toronto is much good for Thai restaurants either though I think this is more the fault of Toronto diners than the restaurants. It's an odd thing but diners here are really reluctant to break out of their conception of a three course meal so Thai restaurants offer menus that pander to that idea even though it simply doesn't work with Thai food. Italian restaurants have the same problem.

Actually, I think that may be the problem with Irish diners, too....they need the meat and three veg and a sweet after. *sigh* You, however, have the advantage of having been to Thailand and therefore having first hand experience of the food. Whereas I'm stuck in the situation where I couldn't afford to go anywhere exotic (except Namibia, because my dad took me) and now that I can I don't have the time or anyone to go with.

"a fridge full of leftovers"

Ah, you don't have a dog, then.

Glasgow only has 2 or 3 good Thai places, which is not a lot compared to the dozens of good Indian places around town. That was the one thing I missed in the States, being able to get a really good curry.

Another example of why civilisation starts at the 49th parallel (or is it 47th?)

This is why I gave up geography and bought a Tom-Tom.

The best Thai food I've ever had is in London. Unfortunately for y'all, it's at my ex-siblings-in-law's house. S-i-L is Thai, and used to manage a restaurant there. She is an amazing cook.
