Vegetarian dinner tonight owing to vegetarian guest. I guess it's appropriate for Good Friday anyway. I don't do veggie cuisine much owing to being highly carnivorous so this is kind of fun. [livejournal.com profile] lemur_catta has a copy of The Greens Cookbook so I used that for inspiration. Here's what I ended up with:

Kale and potato soup (pretty straightforward)
Eggplant and mushroom pasticcio - this is a bit more complicated:
fresh and sun dried tomato sauce
noodles mixed with sauteed eggplant and mushroom mixture
parmigiana/ricotta custard topping
this lot gets layered then baked.
Broccoli and red pepper salad with sultanas, walnuts and a sesame vinaigrette
Dried apricots poached in syrup with lemon zest and fresh ginger

I'll let you know how it turns out.

Which album of hers would you recommend? I've downloaded bits and pieces of her stuff and the manager's speciality at Homemade music (only place in town where I can find her music) is bluegrass and country. Which is fine, but he's not into the trad. folk that I need to get my filthy little paws on.

That's a very tough question because there are so many June Tabors. There's the acoustic, mostly trad, soloist; the more modern stuff, folk rock with the Oyster Band, collaborations with Les Barker, Maddy prior, Pete Bellamy. It just goes on.

There's an album called Anthology that's pretty representative of her solo work. Ashes and Diamonds is classic Tabor. I like Freedom and Rain but that's more electric. Silly Sisters with Maddy Prior is fun and she has some hilarious tracks on Les Barker's Gnus and Roses.

I love the Greens Cookbook. All the recipes in it are so damn complicated though.

I've never made the eggplant pasticcio - let me know how it turns out.

The pasta recipe with green olives, smoked cheese and croutons is one of our staples around here.

Not all the recipes are complicated and it's not hard to see a few simplifications when they get a bit froufrou. Part of the problem is that it's an American book so goes into more detail than I really need or want.
